Next Tuesday is Shrove Tuesday, also known as Mardi Gras (Fat Tuesday) in Francophone countries. I am sure that many of us will follow the tradition of making pancakes on the eve of Lent.
But in France and many francophone countries, crepes are served on February 2nd, at Candlemas (La Chandeleur), which is also called Pancake Day (Le Jour des Crepes). The round shape and golden colour of the pancakes are said to represent the sun, and this in turn reminds us that Jesus is the light of the world.
